Homemade Pizza

Pizza Dough/Crust

1 T. yeast
1 1/2 Cup warm water
1 tsp sugar
Dissolve sugar and put yeast into warm water.
Let it sit a few minutes--I butter pizza pans during this time.

Mix that yeast sugar water with 1 T. sugar, 1 tsp oil, 1 tsp salt. Add approx. 4 Cups flour and knead until a semi stiff dough. Depending on the humidity that day... add a little or subtract a little flour.

I roll it out and put it in the pan and let it rise in the pan. Here in Penang with high humidity, it takes about half an hour max. I bake the crust until it is slightly brown... maybe 10 to 15 minutes (keep an eye on it), that way it isn't soggy when you cook it with toppings on (with our high humidity, it is easy for crust to get soggy, so I highly suggest that you bake it a little before putting the toppings on). Put toppings on, and bake for 5 to 8 minutes longer until cheese is melted and a little bit baked.
