Just kind of made up this recipe based on stuff I'd read about fixing dory. We LOVE this recipe.
4-5 cuts of dory
juice from 1/2 lemon
2 T italian seasoning or basil
salt & pepper to taste
2 T parmesan cheese
butter for frying
1. Put lemon juice on dory and marinate about 20-30 minutes.
2. Sprinkle both sides of dory with the seasonings and rub into the fish.
3. Melt some butter in your pan and fry dory a few minutes on each side.
4. Enjoy!
We purchased a pretty big slab of frozen dory at Nissi for a really good price.

Cocoa rubbed pork chops
We just had this last night. Really good! Kids loved it. It tastes like BBQ pork chops.
2 tablespoons firmly packed brown sugar
2 teaspoons onion powder (or mince some onion)
1 tablespoon unsweetened cocoa powder
1 1/2 teaspoons garlic powder (or mince some garlic)
1 teaspoon ground cumin
1/2 teaspoon ground red pepper flakes (I didn't have this so left it out.)
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
4 bone-in pork chops, 1-inch thick
2 tablespoons oil
1. In a large bowl, combine the brown sugar, onion powder, cocoa powder, garlic powder, cumin, red pepper, salt, and pepper. Rub the mixture evenly over pork chops.
2. Add the oil to a large skillet over medium heat. Add the pork chops and cook 4 to 5 minutes per side, until no longer pink. Serve warm.
